Any Fruit Coffee Cake
Fruit Filling
4-5 cups fruit chopped fruit or berries
1 cup water
1/2 cup sugar
1/4 cup corn starch
In sauce pan combine fruit and water simmer on medium. Whisk together sugar and corn starch, then add to fruit on the stove. Cook and stir until thick and bubbly.
Cake
1 cup sugar
1/2 cup butter
3 cups flour
1 teaspoon baking powder
1/2 teaspoon soda
2 eggs
1 teaspoon vanilla
1 cup buttermilk
Cream butter and sugar. Then add the dry ingredients. (If you want to be fancy you can sift them. I rarely do.) Mix in vanilla, eggs and buttermilk. This batter will be thicker than cake batter.
Spread a little more than half the batter in a greased 9 X 13 pan. Pour fruit mixture on top and then top with remaining better by the spoonfuls. The batter won’t completely cover the top. Don’t panic it will spread while baking.
Crumble Top
1/2 cup flour
1/2 cup sugar
1/4 cup butter
Mix ingredients until crumbly and the biggest chunks are about the size of a pea. Scatter over the top of the cake.
Bake in oven at 350° until golden brown and knife comes out clean. (It may show berries but no batter) This takes 45 minutes to an hour depending on your oven and how much fruit you put in.
